I may be real old school but I’ve been in various trades for many years, and have answered similar questions often,
First of all I’d never apply anything in the form of a sealer to any surface that might come in contact with food.
Allowing the respect that a customer is always ‘right” even when they aren’t, I’d refuse a job that involved doing that.
The substances you mention are natural, and as such are polished, and certainly require care and maintenance in keeping them clean and shining, but both surfaces are also subject to wear, beyond the fact that you might be laying out a steak or veggies on a kitchen counter top.
WeAR means added maintenance in any type of coating.

It is a common rule of thumb to seal your countertops once a year and it is important to do so to prevent waterspotting and stains from being absorbed into the natural pores of the stone.
